In Arcade or Original mode, press and hold L, then R. Then let go of L and then R. Repeat only the second time let go of them at the same time.

Extra time
Select arcade mode and 10 minutes for the time limit. Pick up a customer, then go under water and remain there for 2 minutes. Then you will get 10 extra minutes
